Woohoo ~ I Have An Expedit!

If you're a crafter with space for one of these, you're probably going
"Yeah, so what? I've had one for ages!"

Well, the so what, is that I got mine for Christmas and it was assembled for me yesterday.

I'm not one to follow everyone else usually and for a few years, I was using 2 shoe racks that
my ex had stacked together using metal plates and a wooden paper stand that he'd made from
left over wood. Once I moved into my flat, I added a tall, deep bookcase and with the sliding
door CD/DVD units I had, this was my craft storage. Mind you, between them, they held loads.

Now, I have an Expedit unit and have been able to get rid of the 'make-do' units and move the tall,
deep unit into my bedroom as I needed more storage in there too. This means that the wall I have
my units along is nice and neat. I have my CD/DVD units stacked on top of each other with the
Expedit unit standing alongside. Then I have 2 sets of plastic drawers under the window near them.
The A4 one holds my A4 card and paper while the 12" one holds my scrap paper, spare glues
and DST, and a whole host of other things I don't use much, but needed to find a home for.

I hadn't appreciated how much the Expedit unit holds until I was filling it last night.
To say I'm pleased is an understatement.

UKS January House Challenge

The house challenge for January was to:
*  use the sketch Karen (Scrapdolly) gave us
* include at least 50% journalling or journalling spots

I've used the sketch and included loads of journalling and some journalling spots/tags

The poem in the middle reads:

Sometimes I feel alive, sometimes I feel dead
Sometimes my head hurts, sometimes it’s all in my head

Sometimes I feel lonely, sometimes I need my space
Sometimes there are no problems, sometimes I’ve got too much to face

Sometimes I want to laugh, sometimes I want to cry

Sometimes I want to face life, sometimes I want to be gone from sight
Sometimes I want to run, sometimes I want to fight

Sometimes I want to sing, sometimes I want to shout
Sometimes I know the answer, sometimes I’m in doubt

Sometimes I’m happy, sometimes I’m sad
Sometimes I’m scared, sometimes I’m mad

Sometimes I want to win, sometimes I want to lose
Sometimes I listen to music, sometimes I watch the news

Sometimes I find life hard, sometimes so do you.....*

The wording around the edge reads:
It is what it is! It was what it was! What's gone is gone! Players play on!
If life had a rewind button, I wouldn't use it ... simply because if I changed something in my past, I may not have my future.
Sometimes you have to forget all the pointless drama and the people who created it - forget the bad and focus on the good. Life is short, so be happy.

The other wording (on the tags and around the LO) reads:
The 3C's of life: Choices Chances Changes You must make a Choice to take a Chance or your life will never Change.
Make the rest of your life the best of your life.
Do not give up on life. Tears dry, hearts heal, scars fade.
What's meant to be will never pass you by.

Live as if there is no tomorrow. Love deeply and true. Laugh every day.
I'm getting there slowly which is better than not getting there at all.
Life has always been up and down. If it wasn't for those ups and downs, I wouldn't have went to the places I have been. Live life to the fullest!
Life is not always easy, but it's my life and I'm going to live it.
Don't think about the past, don't think about the future. Worry about the moment you're living in right now. Don't let life pass you by.
The only people I need in my life are the ones who need me in theirs, even when I have nothing to offer but myself.
It's not what I've been through that defines me. It's how I got through.

Shepherdess Pie ~ My Way

Sometimes I get the urge to do some proper home cooking.
Not baking as in pies, pastries and cakes, but proper home cooking.
Wholesome warm and nourishing meals. Meals that mean peeling and chopping.

Sunday, Mum came round for a hot meal and I made a stew with mini herb scones.
Unfortunately, I never took a photo of it, but the stew contained:
carrots, parsnips, swede, courgettes, mushrooms, Quorn pieces and gravy.
I usually add onion, but Mum can't eat onion, so that was left out.

Monday, I still had the home cooking bug, so got myself in
the kitchen again and made this Shepherdess pie ~ my way.

I wish I'd realised the plate needed cleaning before photographing!

So, if it's making your mouth water, here's how I made it:

In a saucepan I put some thickish gravy and added a finely chopped carrot and red onion.

After 5 minutes, I added a finely chopped courgette, a couple of mushrooms and some Quorn mince.

After another 5 minutes, I added some peas and 5 minutes later put it all into an oven proof dish.

If at any of the above stages you think the liquid is too thick, you can add a drop of water.

For the topping, peel and chop some potatoes and swede and boil them together until soft.

Mash with a little butter or margarine.

When the mince and vegetables have cooled a little, top with the mash and fork the top.

Put on a baking sheet and in a pre-heated oven to heat through and brown.
Sometimes the gravy will bubble and spill over, so the tray catches it for you.

And there you have it, Shepherdess Pie ~ My way.

I made enough for two portions, so have frozen the second one for another day.
As I'm trying to watch what I eat, I've switched from a dinner plate to a salad plate.
It seemed to work as I was rather full at the end of the meal.
